I've been to the doctor a couple times in the last year and results of each test are in normal ranges. Nothing abnormal. I know I have arthritis because of the constant achiness and soreness. Again, results don't show arthritis symptoms in my joints, but I know it's there.

I know what you mean. A couple of years ago I went to a rheumatologist had blood work done and no inflammation lol well, that's odd because I have arthritis all over, my fingers are deformed from it and it's in my back and feet for sure too. I'm sure it's in other body parts too. There are lots of diseases you can't always measure by test. Do you have fibromyalgia?
